Typical, traditional dishes and special locations

The best-known dish of the Bregenzerwald region is the hearty meal „Käsknöpfle“. However the traditional cuisine also offers other dishes - which can be found here.

The traditional Bregenzerwald cuisine is based on the ingredients available at the farms: flour, milk, butter and cheese. And from time to time meat or Speck and – depending on the season – herbs, vegetables, salads and berries.

The „classic“ dish of the Bregenzerwald region is called „Käsknöpfle“ or „Kässpätzle“. The original version is much spicier than the versions of other provinces, because among the cheese used for the dish there’s usually a lot of spicy Bergkäse (mountain cheese).

Other traditional dishes are „Riebel“ or „Stopfer“ (reboiled polenta which is roasted in an iron pan until it gets crumbly), barley soup, cheese soup, „Krutknöpfle“ (spätzle with sauerkraut or speck) or „Ofakatz“ (a local variety of the ring cake).

Special locations

Extravagant: Villa Maund

The Villa Maund close to Schoppernau is a historical gem. Originally built as a hunting villa for an English banker, today it is part of the “Gämsle inn” in Schoppernau, and is used for culinary evenings and exquisite events.

Naze’s Hus in Mellau
Naze’s (short name of Ignaz) Hus in Mellau, a small restaurant and B&B, uses only local produce. Naze’s Hus is accommodated in a carefully-renovated Bregenzerwald house listed for preservation with its typical, woodshingle
façade. Awarded the status of traditional inn in 2008 by “Vorarlberg isst…”.
